Pizza oven fuel is the choice between propane, natural gas, hardwood logs, hardwood pellets and lump charcoal, and it decides two things: how much attention a bake demands, and whether the pizza carries wood aroma. It does not decide how good the pizza is. A gas oven and a wood oven at the same floor temperature produce the same base, and anyone who tells you otherwise is describing flavour, not physics.
What follows is the energy arithmetic for each fuel, what a session actually costs, and the safety rules that are not negotiable when you are burning something in a metal box that reaches 950F.
Fuel safety, all fuels: burn fuel outdoors only, never in a garage, under an awning, on a covered porch or in any partially enclosed space, because carbon monoxide is odourless and accumulates fast. Keep at least 1 metre of clearance from fences, siding, eaves and furniture, and put the oven on a stable non-combustible surface. The gap between the last two rows is worth pausing on. Kiln-dried wood is not a premium affectation. A session here means one preheat plus cooking four to six pizzas, which is about 25 minutes of heating and 20 minutes of baking. Prices vary by region and season, so treat the money column as a ratio rather than a quote.

Two conclusions follow from that table. First, if cost per pizza is what you care about, gas wins and it is not close. Second, nobody chooses wood to save money, so the honest question is whether the flavour is worth four to six times the fuel cost and a bake you have to tend. Which fuel suits which oven?

How do I run a wood fire properly?
Fire management is a real skill, and it is mostly about where the fire sits rather than how big it is.
- Build the fire in the centre of the floor. Not at the back. You are heating the stone, and the stone heats fastest directly under the flame.
- Burn hot for 20 to 30 minutes. Small pieces, plenty of air. You want flame, not smoulder. Smoke means incomplete combustion and it tastes like it.

- Let it equalise for 10 minutes. The centre of the stone will be much hotter than where the fire was not. Ten minutes of soak evens it out.
- Feed small pieces during service. One fist-sized piece every 10 to 15 minutes keeps a rolling flame across the dome, which is what cooks the top of the pizza.
Measure, do not guess. A dual-laser infrared thermometer aimed at the centre of the stone is the difference between a 60 second Neapolitan bake and a burnt base, and the two lasers matter because they mark the edges of the measured spot so you know you are reading stone rather than flame. What about pellets?
Pellet ovens meter fuel from a hopper, which converts fire management into refilling. That is a genuine convenience, and pellets carry about 8,000 BTU per pound against 6,400 for kiln-dried split wood because they are compressed and dried to a low, consistent moisture content.
Use food-grade hardwood pellets such as Kona Pizza Oven Wood Pellets, Apple and Oak Blend and nothing else. Heating pellets sold for domestic stoves are made from whatever wood waste is available and may contain binders, adhesives and softwood residue that you do not want in the same chamber as your food. Which logs should I buy?
Three properties matter, in this order: dryness, size, and species.
Dryness is the one that changes the pizza. Kiln-dried wood at around 10 percent moisture lights in a minute and burns with a clean flame. Wood above 20 percent moisture spends the first part of its energy budget boiling water and produces heavy smoke that tastes sour rather than sweet. Barkless kiln-dried oak is the easy default, and the barkless part is not marketing: bark is where most of the ash and most of the acrid smoke come from.
Size matters because portable ovens have small fireboxes. Pieces around 6 inches long and roughly wrist thick fit and burn cleanly. A standard fireplace log will not fit and will smother the fire if you force it in.
Species matters least. Oak, beech, ash, maple, hickory and most fruit woods all work. Oak and beech are the neutral workhorses. Apple and cherry are slightly sweeter. Avoid all softwoods: pine, fir and spruce carry resin that coats the chamber and tastes harsh.
How should I store fuel?
Storage decides whether the fuel you bought still performs when you come to use it, and in the case of propane it is a genuine safety matter rather than a housekeeping one.
Propane tanks live outdoors, upright, always. Never in a garage, a shed, a basement or a car boot for longer than the drive home. Propane is heavier than air, so a slow leak in an enclosed space pools at floor level rather than dispersing, and it will find an ignition source eventually. Store the tank upright so the pressure relief valve stays in the vapour space, keep it out of direct sun, and check the hose connection with soapy water at the start of each season. Bubbles mean a leak, and a leaking connection is replaced rather than tightened and hoped over.
Wood needs to stay dry and it needs air. Kiln-dried logs arrive at around 10 percent moisture and they will happily climb back toward 20 percent in a damp shed, which costs you roughly 800 BTU per pound and gives you back smoke you did not want. Store logs off the ground, under cover, with air moving around the stack rather than sealed in plastic. A sealed bag traps the moisture the wood gives up and rots the pile from the inside.
Pellets are the fussiest of all. They are compressed sawdust held together by nothing but lignin, and any real moisture turns a pellet back into a handful of wet dust. Keep them in a sealed container with the bag inside it, never on a concrete floor, which wicks damp upward continuously. A bag of pellets that has swollen or crumbles when squeezed is finished and will jam a hopper rather than burn.
Charcoal absorbs odours as readily as it absorbs moisture. Keep it away from solvents, paint and fuel cans in the same shed. Lump charcoal that has picked up petrol vapour will put that flavour directly onto your food, and there is no way to burn it out first.
Between bakes and after the fire
Burn residue off the stone rather than washing it. Let the oven cool fully before covering it or moving it.
