First Fire: How to Break In and Cure a New Pizza Oven
Cure a new pizza oven with three graduated fires before you cook anything: about 300F for 30 minutes, then 500F for 45 minutes, then 700F for 45 minutes, letting the oven cool completely between each one. Taking a new refractory floor straight to 900F drives trapped manufacturing moisture out faster than it can escape and cracks the stone.
Curing a pizza oven means heating it in three graduated stages over two days so that water trapped in new refractory materials leaves as vapour rather than as steam under pressure. It takes about four hours of mostly unattended time, it costs a few dollars of fuel, and skipping it is the single most common way people destroy a stone in the first week of ownership.

Safety before the first match: burn fuel outdoors only, never in a garage, under an awning, on a covered porch or in any partly enclosed space, because carbon monoxide is odourless and builds up quickly. Keep at least 1 metre of clearance from fences, siding, eaves and furniture, and set the oven on a stable non-combustible surface. Never pour water on a hot stone or into a hot chamber. The steam scalds instantly and the thermal shock cracks the stone. Why does a new oven need curing at all?
Refractory materials, cordierite stone, castable cement, insulating board and ceramic fibre blanket, all contain water when they leave the factory. Some of it is free moisture absorbed from the air, and some is chemically bound into the material and only released above about 400F.
When you heat a stone gently, that water migrates outward through the pores and evaporates from the surface. When you heat it violently, the water in the interior reaches boiling point before it can travel anywhere, expands to roughly 1,600 times its liquid volume, and forces the material apart. The result is a crack straight across the stone, or a flake of surface lifting away, which is called spalling.

What is the curing schedule?
Three fires, each followed by a complete cool-down to ambient temperature. Do not compress this into one afternoon: the cool-down is part of the process, because it lets moisture that has migrated toward the surface actually leave rather than being driven back in.

Two practical points. First, those are floor temperatures measured on the stone, not dial settings and not air temperatures. Second, the fuel column is an estimate for a portable oven. A large insulated dome oven has several times the mass and takes correspondingly more of everything, including a curing schedule that many manufacturers extend to five or six fires over a week.
Always check the manual first. If the manufacturer specifies a cure, follow theirs rather than this one, because they know how much castable and blanket is inside their own product.
How do I measure the floor temperature?
With an infrared thermometer pointed at the centre of the stone, from about 30 cm away, at a slight angle rather than straight down through the flame. This is not optional equipment for curing, because "about 300F" cannot be judged by eye and the whole point of the schedule is that the temperatures are graduated.
A dual-laser infrared thermometer is the right tool for an outdoor oven: the two beams mark the edges of the measured spot, so you know you are reading the stone rather than the burner behind it, which is the single most common source of wildly wrong readings. A budget infrared gun is fine for curing specifically, since you never exceed 700F, but check the top of its range before you rely on it for cooking: many cheap guns stop below Neapolitan floor temperature and simply display their maximum. Take three readings: the centre, and two points about 5 cm in from opposite edges. New ovens often show a 100F spread across the floor, which tells you the fire is sitting in one place and needs moving or that the oven needs more soak time.
Which fuel should I cure with?
Whatever the oven is designed to burn, at low output. On a gas oven that means the lowest stable setting for fire one and a gradual climb over the following fires. On a wood oven it means a small fire of clean fuel rather than a big one damped down, because a smothered fire produces creosote and coats a brand new chamber in it.
Use kiln-dried barkless hardwood or food-grade hardwood pellets and nothing else. Do not cure with construction offcuts, pallet wood, or heating pellets sold for domestic stoves. Treated and painted timber releases genuinely toxic compounds, and you are about to deposit whatever they leave behind onto a fresh cooking surface that will hold it. How long should a cured oven preheat before cooking?
Curing is a one-off. Preheating is every time, and the number that matters is not how fast the oven reaches temperature but how long the stone takes to saturate with heat all the way through. A floor that reads 900F on the surface after ten minutes will drop to 600F the moment a cold pizza lands on it, because there is no stored heat underneath to replace what the dough absorbs.

The soak column is the part people skip, and it is the reason a first pizza often disappoints while the third one is excellent. Every minute of soak is heat moving down into the mass of the floor, and that stored heat is what cooks the base of pizza number two.
What should I do on the first real bake?
- Cook a test base first. A plain stretched round with nothing on it, or one with only oil and salt. It costs one dough ball and it tells you exactly how fast your floor cooks before you commit toppings to it.
- Time it. If a bare base sets and colours in 60 seconds, you are at Neapolitan temperature. If it takes three minutes, your floor is nearer 600F and you should be baking New York style rather than fighting it.
- Find the hot spot. Every oven has one, usually nearest the burner or the coal bed. Note where it is, because that is the edge you will be turning away from all evening.
- Practise turning. At 900F one edge of a pizza cooks in about 20 seconds, so each pie needs spinning three or four times. A small round turning peel is what does that, and a full-size launching peel cannot.
- Brush between bakes. A long-handled brass brush clears burnt dusting flour, which otherwise smokes and tastes bitter on the next pizza.
What if the weather is against me?
Curing outdoors in cold or wet conditions is possible but slower, and the schedule should stretch rather than compress. Cold ambient air pulls heat off the shell continuously, so an oven that normally reaches 500F in fifteen minutes may take twenty five, and the floor reading is what you follow rather than the clock.
Do not cure in rain. Water landing on a warm shell is not dangerous in the way water on a hot stone is, but it cools the chamber unevenly and it puts moisture back into exactly the materials you are trying to dry. Wait for a dry day, and if the oven has been sitting uncovered through a wet spell, give it 24 to 48 hours under cover before the first fire so the surface moisture has left on its own.
Wind is the underrated problem. A steady breeze across the mouth of a portable oven strips heat from the chamber and can push flame sideways into the shell. Position the oven so the opening faces away from the prevailing wind, and never use anything as a windbreak that could itself catch.
Setting the oven up safely
A pizza oven on a folding camping table is the most common backyard accident waiting to happen, because the oven is heavy, top-hot, and being pushed at by a peel repeatedly. Put it on masonry, on a purpose-built stand, or on something like an outdoor stainless steel table at working height. Working height matters for a second reason: a launch aimed uphill or downhill fails far more often than one aimed straight ahead.

After the fire: shutting down and storing
Let the oven burn down rather than smothering it. On gas, close the valve at the tank first and let the line run empty, then close the oven control. On wood, stop feeding fuel about 20 minutes before you finish cooking and use the residual heat for the last pizzas.
Give the floor a final brush while it is still warm, then leave the oven completely alone until it is cold to the touch, which takes far longer than people expect: a large stone can still be above 200F three hours after the fire went out. Only then should you cover or move it. Do not trust the number on the dial: measure the centre of the stone with an infrared thermometer, because a hot dome above a cold floor produces a burnt top and a raw base.
Why is my new oven smoking and smelling of chemicals?
That is normal on the first two fires. Manufacturers apply high-temperature paint and protective coatings, and both burn off in the first hour of use. Run those fires outdoors with good air movement, do not cook food during them, and expect the smell to disappear entirely by the third fire. If it persists past that, you are burning fuel residue rather than coating.
Can I skip curing on a portable gas oven?
Shorten it, but do not skip it. Most portable gas ovens ship with a cordierite stone that tolerates thermal shock reasonably well, so a single 30 minute fire at a low setting followed by a gradual climb is usually enough. What you should never do with any oven is light it at full output from cold. Give the burner ten minutes on low before you turn it up.
What if my stone cracks during curing?
A hairline crack that leaves the floor flat is cosmetic and the oven cooks perfectly well with it. Replace the stone when a piece lifts proud of the rest, because an uneven floor scorches part of a base and leaves the rest pale. Contact the manufacturer either way: a stone that cracks during a correctly graduated cure is usually a manufacturing defect rather than user error.
