Every number on this page describes a surface that will burn you. A 900F stone will ignite a wooden peel left resting on it and will scar skin instantly. Use long-handled tools and EN407 rated heat gloves , keep the oven outdoors and clear of anything combustible, keep children and pets well back, and never pour water on a hot stone: the steam scalds and the thermal shock cracks it.
Why is floor temperature the number that matters?
Because the base of a pizza cooks by conduction from the stone, and everything else cooks by radiation and convection from the dome and the flame. Those are two separate heat paths that can be wildly out of balance, and almost every pizza problem people describe is a symptom of that imbalance rather than of a wrong dial setting.
The built-in gauge on most ovens does not measure the floor. Depending on the model it reads the air in the chamber, the shell, or the space just under the roof, and it can differ from the stone by 200F in either direction. That is why an infrared thermometer is the single most useful accessory a pizza oven owner can buy: it points at the exact spot the pizza will sit and tells you the truth about it.
Aim at the centre of the stone, roughly where the middle of the pizza will land, and take a second reading near the mouth. Portable ovens usually run 50 to 150F cooler at the opening than at the back, which is one of the reasons a pizza needs turning even in a gas oven with no visible flame on one side.
What temperature does each style want?
Style and temperature are not independent choices. A style is really a package of dough thickness, hydration, flour type and bake temperature that only works as a set, which is why baking a New York dough at Neapolitan temperature produces a burnt disc rather than a fast New York pizza.

How does the calculator work out the time?
From a set of anchor points that reflect how a 12 inch pizza actually behaves at each floor temperature, interpolated between them, then adjusted for base thickness and topping load. The relationship is not linear: dropping from 950F to 850F costs you half a minute, but dropping from 650F to 550F costs you three minutes, because at lower temperatures the base is being dried out rather than flash cooked.

Thickness multiplies that: a cracker base runs at 0.85 of the time and a pan pizza at 1.6. Toppings add a further 15 percent when heavy or wet, because water on the surface has to boil off before anything can brown. That last one is why a pizza loaded with fresh mozzarella and raw vegetables comes out soggy at a temperature that produces a perfect margherita.
How often should I turn the pizza?
Above 800F, every 20 seconds. Between 700F and 800F, every 30 to 40 seconds. Below 700F, one rotation halfway through is usually enough. The reason is simple arithmetic: at 900F one edge of the pizza receives enough heat to blacken in around 20 seconds, so a pizza left facing the flame for a minute has one carbonised side before the far side has set.
You cannot do this with the peel you launched on. A large launching peel has nowhere to go inside a 12 inch chamber and dragging it across the stone strips the flour off the floor. A small round turning peel lifts the pizza an inch, spins it, and sets it back down. In an oven running past 700F this is the tool that decides whether the bake works.

How long does the oven need to preheat?
Longer than it says. Air heats in minutes, stone takes far longer, and the gap between them is where most first bakes go wrong. A portable gas oven typically claims 15 to 20 minutes, and that is roughly right for the air and the shell, but the floor often needs another 5 to 10 minutes after that to stop climbing.

Back to back bakes are the other half of this. Each pizza pulls a surprising amount of heat out of the stone, and a light portable oven can drop 100F between the first pizza and the third. What if I only have a domestic oven?
Then you cannot raise the temperature, so you raise the conductivity instead. A baking steel moves heat into the base far faster than cordierite at the same temperature, which is how a 550F home oven produces a browned, spotted bottom in six to eight minutes rather than a pale one in twelve.
Place the steel on a rack in the upper third of the oven, not the bottom, so the top of the pizza is close to the roof and the broiler. Preheat for at least 45 minutes at maximum, then switch to the broiler for the last few minutes of preheating and leave it on during the bake. That combination gets you closer to a real pizza oven than any other trick available in a domestic kitchen. How long does a pizza take at 900F?
About 75 seconds for a 12 inch Neapolitan at standard thickness, turned three or four times during the bake. At that temperature one edge of the pizza cooks in roughly 20 seconds, so leaving it still is how you get one black side and one raw side. A turning peel is not optional above about 700F, it is the tool the bake depends on.
Why is my pizza burning on top but raw underneath?
The dome or the flame is far hotter than the floor. This is the classic new pizza oven problem, and the fix is to let the stone catch up: run the oven at full power for 20 to 30 minutes, then turn it down and wait for the floor to equalise before launching. Read the floor with an infrared thermometer rather than trusting the built-in gauge, which usually measures the air or the shell.
Why is my base burning before the top cooks?
The floor is too hot for the style you are baking, or the pizza is too thick for that temperature. A Neapolitan dough on a 950F floor is done in 90 seconds, but a thicker New York base needs longer than that to cook through, and at 950F the bottom is charcoal by then. Drop the floor to 650 to 700F for anything that needs more than about three minutes.
How much hotter is the dome than the floor?
In a live wood or gas oven the dome typically runs 100 to 250F above the floor, because the flame is up there and heat rises. That gap is what cooks the top of the pizza, which is why Neapolitan pizza is baked with a live flame rather than in a soaked, flameless oven. Do I need to preheat a pizza stone for an hour?
In a domestic oven, yes, or close to it. Cordierite conducts heat slowly, so 45 to 60 minutes at full temperature is realistic even though the oven says it reached temperature in 15. A steel plate reaches equilibrium faster and holds far more usable heat, which is why steel produces a browned base in a 550F oven where a stone leaves it pale.
