How does the calculator model fermentation?

Fermentation speed roughly doubles for every 17F rise in dough temperature, across the range that matters for pizza. That single relationship does most of the work. The calculator converts every stage of your schedule into "equivalent hours at 75F", adds them up, and compares the total to how much fermentation your yeast dose needs.

  • Fermentation needed = 4 hours multiplied by (0.30 divided by your yeast percentage). A dough at 0.15 percent needs twice as much elapsed fermentation as one at 0.30 percent, because there is half as much yeast doing the work.
  • Rate at a temperature = 2 raised to the power of (temperature minus 75) divided by 17. At 75F the rate is 1.00, at 58F it is 0.50, at 39F it is 0.23.
  • Time at that temperature = fermentation needed divided by the rate, minus whatever the earlier stages already contributed.

Worked through for a 72 hour cold ferment: at 0.07 percent yeast the dough needs 4 multiplied by (0.30 / 0.07), which is 17.1 equivalent hours at 75F. Two hours on the bench at 70F contribute 2 multiplied by 0.815, or 1.6 equivalent hours, leaving 15.5. The fridge at 39F runs at 0.23, so 15.5 divided by 0.23 is about 67 hours of cold time. Add the two hours on the bench and you have a three day dough.

This is a planning model, not a law of nature. Flour strength, salt percentage, dough temperature straight out of the mixer and how tightly the balls were shaped all move the real answer. Treat the number as the time to start checking, not the moment to stop.

What temperature is my dough actually at?

Almost nobody knows, and it is the largest source of error in every fermentation schedule. Room temperature is the air. Dough temperature is what the yeast experiences, and after ten minutes in a stand mixer it can be 10F or more above the room through friction alone. That is enough to halve your proof time without changing a single line of the recipe.

Professional bakeries calculate water temperature backwards from a target final dough temperature, usually 75 to 78F for pizza. The rule of thumb is that water temperature should be roughly three times the target dough temperature, minus the flour temperature, minus the room temperature, minus a friction factor of about 10F for a stand mixer or 2F for hand mixing. If that sounds fussy, the shortcut is simply to measure the dough after mixing with an instant read probe and adjust the next batch. An infrared gun cannot do this job, because it reads surfaces and not the inside of a dough ball.

Note how quickly the fridge column runs away: at 0.30 percent yeast a fridge dough is done in under a day, which is why cold-ferment recipes always call for far less yeast rather than the same yeast and more patience.

Why cold ferment at all?

Because the two things happening in a dough run at different speeds. Yeast produces carbon dioxide, which is what makes the dough rise, and enzymes break starch into sugars and protein into amino acids, which is what makes it taste of something. Cooling the dough slows the gas production far more than it slows the enzymes, so a long cold ferment develops flavour and browning capability without over-inflating the dough.

The practical result is a base that browns properly instead of staying pale, and a flavour with depth rather than raw yeast. It also happens to be enormously convenient: dough made on a Wednesday is ready on a Friday with no attention in between, which is a much easier thing to fit around a working week than a four hour same-day schedule.

How do I tell a proofed ball from an over-proofed one?

Read the dough, not the clock. A ready ball has roughly doubled in volume, has a domed top rather than a flat one, and shows small bubbles under the surface. Press it gently with a fingertip: the dent should fill back slowly and not quite completely. If it springs straight back, it needs more time. If the dent stays and the ball has spread into a flat puddle with a slack, tearing skin, it has gone too far.

Straight-sided containers turn this from an opinion into a measurement, which is why pizzerias use graduated dough boxes rather than mixing bowls. You can see the starting level and the current level at a glance without disturbing anything. A graduated Cambro container does the same job for a bulk ferment before the dough is divided.

An over-proofed dough is not a disaster, it is just a different pizza. It will be harder to handle, will not spring in the oven, and will bake flatter and paler. If you catch it early you can knock it back and re-ball, buying yourself another hour or two, though the crumb will never be as open as it would have been.

What comes next?

Take balls out of the fridge two to four hours before you plan to bake, so they come up to around 65F. Cold gluten is stiff, and dough pulled straight from a 39F fridge will spring back faster than you can open it. This warm-up stage is not optional and it is the single most common reason a carefully planned three day dough refuses to stretch.

How do I know when pizza dough is proofed?

A proofed ball has roughly doubled, has a domed rather than flat top, and springs back slowly when you press it. If your fingertip dent fills straight back in it needs longer, and if it stays fully dented and the ball spreads flat it has gone too far. Should I bulk ferment before balling or after?

Both work, and the choice mostly affects your schedule. Bulk first then ball gives a stronger, more uniform dough and lets you divide once the gluten has developed, which is the standard Neapolitan approach. Balling immediately and cold fermenting the balls saves fridge space and suits a home cook working ahead. What matters far more than the order is that the balls get several hours at room temperature before you stretch them.
