About PizzaOvenCalc
PizzaOvenCalc is a free set of pizza dough and pizza oven calculators, plus researched gear guidance. We do not test gear in person and we never write as though we do. Every figure on the site is either checkable arithmetic or a published specification, and where we cannot verify a figure we leave it out rather than guess.
What this site is
A set of six calculators for pizza dough and pizza ovens, thirty oven specification pages, and a library of guides, comparisons and reference charts around them. The calculators are the reason the site exists. Everything else is there because someone who has just worked out that they need 595.9 g of flour usually has a follow-up question about the oven, the flour or the peel.
The design constraint that shaped everything is unusual for a gear site: the dough calculator gets opened during a bake, repeatedly, on a phone, by someone with flour on their hands and the screen propped against a bag of 00. So every input clears 44 pixels in both directions, every common value has a preset button so the ordinary case needs no typing, and every result renders in large fixed-width type that is readable at arm's length.
How the numbers are produced
All dough arithmetic is baker's percentage: flour is defined as 100 percent and every other ingredient is expressed as a percentage of the flour weight. That is standard practice in every bakery in the world, it is simple algebra, and it is checkable. Every calculator on this site displays its own check line showing the component weights adding back to the dough weight you asked for, because a number you can verify is worth more than a number you have to trust.
Two things on the site are models rather than arithmetic, and we say so on the pages themselves. Fermentation timing uses the working approximation that yeast activity roughly doubles for every 17F rise in dough temperature, which holds well enough between about 40F and 90F to plan a schedule. Bake times are interpolated between anchor points drawn from published practice. Both are accurate enough to tell you when to start checking and not accurate enough to be a law, and they are labelled that way.
How gear is chosen, and what we will not claim
We compare published manufacturer specifications, verified owner reviews and long-established baking practice. We do not test gear in person. Any site claiming hands-on testing of forty pizza ovens is telling you a story, and we would rather be useful than sound authoritative. What we can do honestly is read specifications carefully, notice when a claim has nothing behind it, and say so.
That principle shows up most visibly on the oven specification pages. Where we cannot verify a maximum temperature, a preheat time or a weight, the row is omitted and the page states which rows are missing. Several budget ovens carry impressive temperature claims with no supporting specification, and repeating a number because it appeared on a product page turns a reference into a rumour.
The same applies to products. Every Amazon listing on this site was returned by a product API and then read back by hand to confirm the title matches the product we mean and the price is sane for the category. Where a genuinely good product is not sold on Amazon, and several are not, it gets a scoped search link rather than a fabricated listing. A search link is honest. An invented listing sends a reader to the wrong product and earns nothing.
How the site makes money
Affiliate commissions, principally through the Amazon Associates program. When you buy something after following a link from here, we may earn a commission at no extra cost to you. That is the entire business model: there is no paywall, no subscription and no sponsored placement, and no manufacturer has any input into what appears on these pages.
The obvious conflict of interest is that we are paid when you buy things, so it is worth stating what we do about it. Every roundup on this site presents three tiers and says plainly who should not buy the expensive one. Every build guide has a "what you can skip" section. Two lines in the build guides, the scale and the turning peel, are identical from the $334 build to the $2,914 build, and we say so, because pretending an expensive version of a $17.99 tool exists would be a lie that earns more. What we deliberately do not do
- No fabricated testing. No "we tested", no "in our lab", no invented hands-on impressions.
- No invented specifications. Missing figures are omitted and labelled, never estimated to fill a table.
- No fake urgency. No countdown timers, no "prices rising", no manufactured scarcity.
- No recommending a product we would not use ourselves at that tier, including at the cheap end.
- No gadget worship. Devices that automate a step worth learning are left off the lists on purpose.
Why some rows say "not published"
Because a specification page that guesses is worse than one with holes in it. Manufacturers publish weights and preheat times inconsistently, and a number of budget ovens carry impressive temperature claims on their listings with no supporting documentation anywhere. Repeating a figure because it appeared on a product page turns a reference into a rumour, and once one figure on a page is a guess, none of them can be trusted.
So the rule is simple: if we cannot stand behind a figure, the row comes out and the page says which rows are missing. Across the oven pages that affects maximum temperature, preheat time, weight and largest practical pizza on a handful of models. The practical answer where a figure is missing is to measure your own oven with an infrared thermometer, which is more useful than any published maximum anyway.
Safety, which matters more here than on most sites
A working pizza oven holds a floor temperature between 700F and 950F and a shell hot enough to burn skin on contact. That is genuinely dangerous equipment operating in a backyard, often with children nearby, and every relevant page on this site carries a specific warning rather than a generic one. Fuel-burning ovens are outdoor use only, need at least three feet of clearance from anything combustible, must never be moved while lit or hot, and must never have water poured onto the stone.
Everything here is researched guidance, not professional or food-safety instruction. Follow your oven manufacturer's manual, which governs, and follow current food-safety guidance for handling and storing dough and toppings. The full terms are on the disclaimer page.
Why the site looks the way it does
Because of one unusual fact about the audience. Most gear sites are read once, on a laptop, before a purchase. The dough calculator here gets opened during a bake, repeatedly, within a single session, by someone standing at a bench with flour on their hands. That is a different design problem and it drove every visual decision.
- Every tappable control clears 44 pixels in both directions. A stepper button you have to aim at is useless when your hands are covered in dough.
- Every common value has a preset chip. Changing a hydration from 62 to 65 percent, or a ball size from 250 g to 320 g, takes one tap and no keyboard.
- Every numeral on the site renders in fixed-width type. Gram weights, hydration percentages, floor temperatures, bake times and prices all read as instrument output, which is faster to scan at arm's length than proportional text.
- Results are large and high contrast. A result you have to lean in to read is a result you will misread when the oven is at 900F and a pizza is waiting on a peel.
- Light mode only. A phone screen at arm's length in daylight is easier to read dark on light, and it is a portfolio-wide rule here regardless.
How the site is organised
Six sections, in the order the work actually happens rather than in the order a search engine would prefer. The calculators do the arithmetic. The reference charts are the same figures as lookup tables, for when typing is slower than glancing. The guides explain the method behind the numbers and what to do when the dough disagrees with them.
On the equipment side, the oven specification pages cover every model we track with any unverified figure omitted, the gear roundups pick products at three tiers per category, the comparisons settle the head to head questions and take a side, and the complete builds put everything together at three budgets with a running total on every line.
The charts and the calculators use identical figures by construction, so the two can never disagree, and the build guides use the same tier picks as the roundups for the same reason. That consistency is deliberate: a site whose own pages contradict each other is worse than one that covers less.
Who this site is for
Someone who has decided to take pizza seriously enough to weigh things. That is the whole qualification. It covers a first-time cook working out why their dough will not stretch and a long-time baker checking a 72 hour schedule, and the same pages serve both because the arithmetic does not change with experience, only the confidence with which you override it.
Corrections
