Cold fermentation means holding pizza dough at 35F to 40F for 24 to 72 hours so that enzymes in the flour keep working while the yeast is slowed almost to a stop. It is the single highest-value change a home baker can make, it costs nothing, and the only thing you have to get right is the yeast quantity. Give a 48 hour dough a same-day yeast dose and you will open the fridge to a bubbling, slack, sharply sour mess.

Look at the bottom row. 0.30 g of yeast. There is no spoon that measures that, and there is no way to eyeball it. This is the reason a 0.1 g resolution scale is the first thing on every equipment list on this site: below about 1 g, a kitchen scale that reads in whole grams is reporting a number it cannot actually distinguish from zero.
What are the exact weights for a 48 hour dough?

What does a 48 hour schedule actually look like?
Cold fermentation is mostly waiting, but the first two hours and the last two hours are where the work happens. This schedule assumes you want to bake at 7pm on the second evening.

The two room-temperature hours at the start are not optional. Yeast in a dough that goes straight from mixing into a 38F fridge takes hours to become active at all, and a large share of the schedule is lost warming the mass through. Those first 90 minutes get the population established so the fridge is slowing something that is already running.
Why does a colder ferment taste better?
Two different processes run in a dough, and they respond to temperature differently. Yeast produces carbon dioxide and alcohol, and it is highly temperature sensitive: as a working approximation its activity roughly doubles for every 17F rise in dough temperature. Enzymes already present in the flour break starch into simple sugars and protein into free amino acids, and they slow down in the cold too, but far less dramatically.
Chilling the dough therefore changes the ratio between the two. You get many hours of enzyme work for a modest amount of gas production, which is exactly what you want: a dough loaded with the sugars and amino acids that drive browning and flavour in the bake, without a gluten network that has been stretched to breaking by two days of gas.

Which flour survives 72 hours?
Long ferments need flour with enough gluten strength to still be holding together at the end. Caputo Pizzeria 00 is milled specifically for long fermentation at high heat, which is why it is the reference flour for 48 and 72 hour Neapolitan dough. A supermarket all-purpose flour at around 10.5 percent protein will be structurally tired by hour 36 and slack by hour 60.
If your oven is a home oven with a steel rather than a 900F outdoor oven, use a 12.7 percent protein bread flour instead. It handles a 48 hour ferment comfortably and browns properly in the longer, cooler bake that a domestic oven forces. There is no advantage to buying 00 flour for a 550F bake, and there is a real disadvantage, because it stays pale.
How do I store the balls in a domestic fridge?
Space and a lid are the whole problem. Balls need room to spread into discs without touching, because touching balls fuse and then tear each other apart when you lift them, and they need a sealed lid because a dry skin will not stretch.
Latching dough proofing boxes hold four to six balls each and survive being slid in and out of a fridge shelf without popping open. Do not oil the balls heavily. A light film on the box is enough. Oil pooled around the base of a ball fries the bottom skin in the oven and stops the base sealing to the stone, and it makes the ball slide rather than tighten when you try to shape it.
How do I tell if my dough overproofed in the fridge?
Three signs together, not one alone:
- The ball has spread flat and lost its dome. A correctly proofed 48 hour ball is still noticeably domed, roughly one and a half times its original volume, not three times.
- Large irregular bubbles sit just under the skin. Fine even bubbles are good. Blisters the size of a coin are gas that the gluten can no longer hold.
- It tears in the centre when you open it. Overproofed gluten has been stretched past recovery and will not extend into a thin base.
The fix is always the yeast, never the schedule. Cut to 0.05 percent for 72 hours and reprint your figures. A useful diagnostic is a fast instant-read probe pushed into a ball on the way into the fridge: if it reads 80F rather than 75F, the dough carried an extra 5F of head start into a cold rest that was supposed to stop it.
Can I freeze cold fermented dough?
Yes, and it works better than most people expect, provided you freeze at the right point. Let the dough complete its bulk ferment and its balling, give it 12 to 24 hours in the fridge so fermentation is properly underway, then freeze the individual balls on a tray before transferring them to bags. Freezing them loose first stops them fusing into a single block.
Freezing kills a proportion of the yeast population, which is why a dough frozen straight after mixing often refuses to rise at all when it is thawed. A ball that has already fermented for a day has both a larger population to lose some of, and the flavour compounds already built, so the loss matters far less.
Thaw in the fridge overnight, never on the counter, then bring the ball to room temperature for two hours exactly as you would with any cold dough. Expect a slightly less dramatic rim than a fresh ball would produce. Use frozen dough within about six weeks: beyond that, ice crystals damage the gluten network and the ball tears when you open it.
Can I use a preferment instead?
Yes, and the two techniques stack rather than compete. A poolish, equal weights of flour and water with a trace of yeast left overnight, or a stiff biga at around 50 percent hydration, both build flavour by the same enzymatic route before the final dough is even mixed. You then cold ferment the finished dough for a shorter period, typically 24 hours rather than 48.

What to do on bake day
Take the boxes out 2 hours before you intend to bake, and leave the lids on. Fire the oven at the 90 minute mark so the stone has time to saturate rather than merely reach temperature on the surface. Flour the bench, lift each ball out with a bench scraper rather than your fingers so you do not degas the rim, and open it from the centre outward.
