- Oil lightly. A thin film over the whole ball, not a pool. Oil is doing two jobs: it stops the surface drying into a skin that will never rehydrate, and it stops the ball welding itself to the bag.
- Freeze the balls separated first. On a tray, not touching, for about an hour. Skipping this is how you end up with a single fused brick that has to be thawed as a unit.
- Transfer to a sealed bag or lidded box. Press the air out of a bag before sealing. Air is what causes freezer burn, which on dough shows up as dry grey patches that stay leathery after thawing.
- Label with the date and the ball weight. Three months from now you will not remember whether those are 250 g Neapolitan balls or 400 g New York balls, and it matters.

How do I thaw frozen pizza dough?
Two stages, and both are mandatory.
Stage one, overnight in the fridge. Move the ball from the freezer to a lidded box on a fridge shelf and leave it roughly 12 hours. At 38F to 40F the ice melts slowly and the whole ball equalises before fermentation restarts in earnest. Take the ball out of any sealed bag and put it into a box with room to spread, because a thawing ball will relax outward and a bag holds it in a lump.
Stage two, 2 to 4 hours at room temperature. This is the stage most people skip and it is where the finished texture comes from. Why must I not thaw dough on the counter from frozen?
Because a frozen ball thaws from the outside inward, and dough ferments as soon as it is warm enough to. Put a solid frozen ball on a 72F counter and the outer few millimetres reach working temperature within about half an hour. The centre is still ice for another two hours. By the time the middle is soft, the skin has had two and a half hours of active fermentation at room temperature on top of everything it did before it was frozen.
What you get is a ball that is over-fermented and under-fermented at the same time. The outside is slack, wet, grey and sticky, with a layer that tears the moment you press it. The inside is dense and cold and has produced no gas at all. There is no way to open that into an even base: the thin outer layer gives way while the centre refuses to move, and the pizza either splits or comes out with a raw dense middle and a papery edge.
There is also a food-safety argument. Dough sitting for hours in the 40F to 140F band is a reasonable growth medium, and a large ball spends a long time in that band when it is thawed from the outside. Fridge thawing keeps the whole mass under 40F until it is uniformly liquid water again, then you warm it deliberately and quickly. That is the difference between two controlled stages and one uncontrolled one.
The only acceptable shortcut is a sealed bag in cool water, which thaws a ball in roughly 60 to 90 minutes with far less temperature gradient than air does, because water moves heat much faster than air. It is still second best. Plan the overnight fridge stage and you never need it.
How do I tell if dough has over-fermented?
Four signs. Any one alone can be something else, but two or more together is a diagnosis.

Slack and shiny is the shorthand most bakers use. A dough that has gone too far looks wet on the surface, feels loose rather than springy, and does not hold a shape when you set it down. Seriously slack, tears when hung, smells strongly of alcohol. Stop trying to make a round pizza out of it. Slack over-fermented dough is very good in a pan, because a pan holds the shape that the gluten no longer can. Press it into an oiled rectangular pan, let it relax for 45 minutes and bake it as a thick pan pizza or a focaccia at 450F to 500F. That is a genuinely good outcome, not a consolation prize. Alternatively knock it back, fold in a little extra flour, and treat it as flatbread dough.
Grey, soupy, tears at a touch, sharply acetone. Throw it away. Past a certain point the gluten is gone and there is nothing to rebuild. Weighing the yeast correctly costs 2 g and thirty seconds. Rescuing dough you should not have made costs an evening.
The genuine fix is always upstream. Over-fermentation is a yeast quantity error, not a technique error, and the correction is to reprint the formula with the right dose for the schedule you actually intend to run. Final dough temperature matters too: a dough that leaves the mixer at 82F rather than 75F carries a real head start into a rest that was calculated for 75F.
What should I store dough in?
Three requirements, and they are the same for the fridge and the freezer: a real seal, straight sides, and enough room for each ball to spread into a disc without touching its neighbours. Touching balls fuse, and pulling fused balls apart tears the skin you spent time tightening.
