How to Stretch Pizza Dough Without Tearing It

The relationship is straightforward: pizza is a disc, so the dough required scales with the square of the diameter, not with the diameter. Doubling the width of a pizza needs roughly four times the dough. Pizzerias express this as a thickness factor, the weight of dough per unit of finished area.

The working range for a stretched round pizza is 2.2 to 2.9 grams of dough per square inch of finished area, which is a thickness factor of 0.078 to 0.102 ounces per square inch in the older pizzeria notation. Neapolitan sits at the bottom of that band, New York at the top, and pan styles run well above both because the dough is pressed rather than stretched. How long does dough need to warm up before stretching?

90 minutes to 2 hours at room temperature, and closer to 3 hours if your kitchen is below 65F. This is the most commonly skipped step in the whole process and it causes more tearing than any technique error.

Cold gluten is stiff and highly elastic. A ball at 40F snaps back the moment you release it, so you push harder, and pushing harder thins the centre unevenly until it tears. The same ball at 68F extends under its own weight and holds the shape you give it. Take the boxes out early, leave the lids on so the skin does not dry, and do something else. What is the actual hand movement?

  1. Flour the bench with semolina. A palm-sized patch of semola rimacinata is enough. Dust the top of the ball with a little 00 flour .
  2. Lift the ball out with a bench scraper. Slide a bench scraper underneath rather than digging with your fingers, which tears the skin you spent hours building.
  3. Set the rim. Press your fingertips into the dough in a ring about 1.5 to 2 cm inside the edge, all the way around. Everything outside that ring is now the cornicione and you never touch it again.
  4. Press outward from the centre. Flat fingers, gentle pressure, working from the middle toward the ring in a spiral. The gas moves outward ahead of your hands into the rim.
  5. Flip and repeat once. Turn the disc over and press outward again. This evens out the thickness and keeps the base from favouring one face.
  6. Stretch on your knuckles. Drape the disc over the backs of both hands, fists loosely closed, and rotate it slowly. Gravity does the last two inches of diameter. Keep your knuckles under the thicker areas, never under the thin centre.
  7. Check it against a light. Hold it up. The centre should glow faintly and evenly. Bright spots are about to become holes.

Total time for a well-rested ball: under a minute. If it takes you three minutes and a fight, the dough is not ready and the answer is to put it down and wait rather than to push harder.

Why does dough spring back?

Gluten behaves like a spring. Stretching it stores tension, and the dough recovers that tension unless enough time passes for the protein network to rearrange. Three things put too much tension in a ball:

  • Cold. Below about 60F, recovery is fast and stretching is a losing battle.
  • Overtight balling. Dragging a ball across the bench eight or nine times winds the skin far tighter than the two or three passes that are actually needed.
  • Underproofing. A ball that has not fermented long enough has a dense, elastic structure and no internal gas to help push it outward.

The fix for all three is the same and it is free: leave it alone for another 30 to 45 minutes. You cannot out-muscle gluten, and every attempt thins the middle unevenly. How do I get a big puffed rim?

The rim, the cornicione, is not made during the stretch. It is made during fermentation and protected during the stretch. Three rules protect it:

Never press within 1.5 cm of the edge. That ring of untouched dough still holds all the gas the ferment produced, and gas is what inflates in the oven.

Never use a rolling pin on a style with a raised edge. A pin flattens the entire disc uniformly, gas included. It is the correct tool for a cracker-thin bar pizza and the wrong tool for everything else on this site.

How do I move it onto the peel?

Fold the disc loosely in half over your forearm or lift it with both hands from underneath, and lay it down onto an already dusted wooden peel in one motion. Do not stretch the last inch on the peel: that presses the dough into the wood and pushes the dusting layer aside, which is the most reliable way to weld a pizza in place.

Does hydration change how dough stretches?

Yes, in both directions. Wetter dough extends more easily and tears more easily, because there is more water lubricating the gluten and less flour holding it together. A 65 percent Neapolitan dough opens with almost no resistance and punishes a heavy hand. A 58 percent dough needs noticeably more encouragement and is far harder to tear.

If you are consistently putting holes in your bases, dropping 2 or 3 hydration points is a reasonable diagnostic step. If you are consistently fighting a dough that will not open, raising hydration by the same amount usually helps more than adding time. Pan styles invert the whole problem: a Detroit dough at 75 percent is not stretched at all, it is pressed into a pan in two stages with a rest in between.

Should I stretch differently for a hot oven?

Yes, and it is one of the few genuinely style-specific adjustments in the whole process. The variable is how long the pizza will be in the oven, because that decides how much water can leave the base.

For a 900F oven and a 90 second bake, stretch thinner and leave a fatter rim. The centre can go to about 2.5 to 3 mm because it has to set almost instantly, and the untouched ring at the edge should be a full 2 cm wide so it has enough gas and enough mass to inflate dramatically in the time available. A thick centre in a 90 second bake stays raw, and there is no way to extend the bake without burning the rim.

For a 550F home oven and a 7 minute bake, stretch slightly thicker and flatter. Three to four millimetres through the middle is right, and the rim should be narrower, about 1 cm, because it will not inflate the same way at that temperature and a wide rim simply becomes a wide band of bread. You are aiming for an even disc that browns uniformly rather than a dramatic cornicione.

For anything in between, split the difference. A 700F countertop oven over four minutes wants roughly 3 mm and a 1.5 cm rim.

The practical consequence is that the same dough ball can produce two quite different pizzas depending only on how you open it. If your bases are consistently raw in the middle, try stretching the centre thinner before you change anything about the formula, because it is free and it is the more likely cause.
