Dough Ball Size by Pizza Diameter Chart
A 12 inch Neapolitan pizza needs about 249 g of dough. Dough weight scales with area, not diameter: a 12 inch circle is 113.1 square inches and Neapolitan dough runs 2.2 g per square inch, so 113.1 multiplied by 2.2 gives 249 g. The same density gives 111 g for an 8 inch pizza, 339 g for a 14 inch and 442 g for a 16 inch, because a 16 inch pizza has 78 percent more area than a 12 inch.
Dough ball weight is pizza area multiplied by a dough density measured in grams per square inch. That is the whole method, and it replaces every recipe that only works at one size. Read the last column slowly, because it is the point of the whole page. A 16 inch pizza needs 78 percent more dough than a 12 inch, not the 33 percent the diameters suggest. A 24 inch pizza needs four times as much. Every home cook who has watched a large pizza tear in the middle scaled by diameter, and every one who has produced a thick, bready small pizza used the ball weight from a bigger one.
What density does each style use?
Density is the personal number in pizza and it is the one worth dialling in first, because once you know your own figure you can produce your base at any size without guessing again. American pizzerias have used the same idea for decades under the name thickness factor, measured in ounces per square inch. The conversion is exact: divide grams per square inch by 28.3495.

How much dough does a rectangular pan need?
Same method, simpler area. Length multiplied by width, then multiplied by density. Pan styles use a higher density than round pizzas because the dough is never stretched: it is pressed out to the corners and then allowed to rise into something much closer to a bread.

A half sheet pan at 13 by 18 inches holds 234 square inches, more than twice the area of a 12 inch round pizza, which is why a Sicilian eats a whole batch of dough that would have made four Neapolitans. Note that pan dough is usually oiled rather than floured, and the oil is part of the formula rather than a dusting, so check the oil percentage on the baker’s percentage chart before mixing.
What size pizza will my existing ball make?
Reverse the formula. Diameter equals 2 multiplied by the square root of the ball weight divided by the density multiplied by pi. This is the table for the moment when you have already made 320 g balls and need to know what to stretch them to.

The most useful line in that table is the 250 g row. The same ball makes a 12.0 inch Neapolitan, an 11.4 inch contemporary base or a 10.5 inch thick New York slice, all of which are correct pizzas. Stretching a 250 g ball to 14 inches is not a bigger pizza, it is a thinner one at 1.62 g per square inch, and it will tear at the centre and go translucent under the sauce.
Does the oven change the ball weight?
Mostly through what physically fits. The floor of a 12 inch portable oven cannot take a 16 inch pizza, so the size decision is made before the dough decision. Measure the usable floor rather than trusting the model name, and allow an inch of clearance all round for the turning peel. The oven size calculator works out what your oven can actually cook.
Temperature has a smaller but real effect on the density you should choose. A 900F oven finishes a pizza in 60 to 90 seconds, so a very thin base survives without drying. A 550F home oven with a steel takes six to eight minutes, and a base at 2.0 g per square inch will be a cracker by the time the cheese is right. If you are baking in a home oven, move up one density step from the style you are copying, so 2.45 instead of 2.2.
How do I divide a batch into equal balls?
Weigh each one. Dividing bulk dough by eye produces balls that differ by 30 or 40 g, which is a visible difference against a 250 g target and the reason one pizza in every batch comes out noticeably thicker than the rest. A 0.1 g digital scale is more precision than dividing needs, but it is the same tool the hydration calculator needs for weighing yeast, so most people only buy one.
Cut with a bench scraper rather than pulling by hand, because tearing destroys the gluten network you spent hours developing and the ball never fully recovers its shape. Shape each piece into a tight ball with a smooth top and a sealed seam underneath, then rest them in proofing boxes with two to three ball diameters of space between them, so they can spread into discs without fusing. Balls that fuse have to be torn apart, and a torn ball never stretches evenly again.
Finally, remember that ball weight decides how much material you have, not where it ends up. Stretching pushes dough out of the centre and into the cornicione, so the same 250 g produces either a thin centre with a dramatic rim or an even base with almost no rim, entirely depending on technique. If your rim is thin and your centre is thick, the fix is in the stretching, not in the calculator.

Because a pizza is a disc and the area of a disc grows with the square of the radius. Moving from a 10 inch to a 12 inch pizza is a 20 percent increase in diameter but a 44 percent increase in area, so it needs 44 percent more dough to keep the same thickness. Scaling by diameter gives a base that gets thinner as the pizza gets bigger, which is exactly why large home made pizzas tear at the centre.
What is thickness factor in pizza dough?
Thickness factor is dough weight in ounces divided by pizza area in square inches, the traditional American pizzeria measure. A factor of 0.078 is a thin Neapolitan base, 0.092 is a classic New York slice and 0.120 or higher is Detroit or pan. Only the area formula changes. A quarter sheet at 9 by 13 inches is 117 square inches and takes 398 g. Pan styles use a higher density than round pizzas because the dough is pressed to the edges and rises thick rather than being stretched thin.
How much extra dough should I mix for waste?
Add about 2 percent to the batch total. Dough sticks to the bowl, the bench, the scraper and your hands, and on a 1,000 g batch that loss is enough to leave the last ball 15 or 20 g light. If you want four exact 250 g balls, mix for 1,020 g of total dough. Professional bakeries build in the same allowance, and the leftover scrap is the price of hitting every ball on target.
