Not as long as you think, and the number depends almost entirely on what the peel is made of. Wood has grain and absorbs a little moisture, which keeps the contact surface dry. Bare metal has neither, so the film of moisture that forms under the dough has nowhere to go.

A 75 percent dough can bond in under 45 seconds, because there is simply more free water at the contact surface. Two other dough factors matter almost as much. - Dust the peel first, 1 to 3 g of semolina spread thin, then place the stretched disc on top. Never stretch onto a bare peel and dust afterwards.
- Top in launch order: sauce, then cheese, then everything else, keeping sauce an inch from the rim so it cannot run underneath.
- Shake every 20 seconds during the build. A pizza that still moves freely will launch. A pizza that has stopped moving will not, and finding out at the oven mouth is too late.
- Aim at the far side of the stone, holding the peel at roughly 20 degrees with the tip touching down where you want the far edge of the pizza to land.
- One quick pull. Straight back, decisively. Tipping and shaking at the oven mouth is how pizzas fold, and hesitating is how they land in a heap.
