It can get very close. A stone temperature around 850F bakes a properly stretched, well hydrated base in roughly ninety seconds with good oven spring and some charring. Does a gas oven need a windbreak?
It helps. Wind pulls heat out of the chamber and can make the flame unstable, which shows up as one side of the pizza cooking faster than the other. Position the oven so the opening is not facing into the wind, and keep it well clear of fences, walls and anything that can catch fire. Never enclose it to block wind.
